Today I present to you:
Ciabatta with grilled vegetables and goatcheese
it's delicious,
it's easy,
it's cheap,
it's love sweet love, baby!
1 medium red bell pepper, cut in strips
1/2 zucchini, cut into 1-inch chunks
1 large onion, sliced in rings
200gr (yellow) cherry tomatoes, halved
100gr mushrooms, halved
2 large garlic cloves
a drizzle of olive oil
thyme and rosemary, chopped
Salt & black pepper
250gr goat cheese
1 ciabatta
one: preheat oven to 200C.
two: toss all the vegetables in a large casserole along with a large drizzle of olive oil. Add the herbs at this point and use your hands to mix the olive oil among all of your lovely vegetables.
three: Bake casserole until the veggies start looking sweet and just tender. Use a spatula to toss them once or twice to give all the vegetables a chance to be on top at least once.
four halve the ciabatta and put it several minutes beneath the grill until just golden.
five: smear a nice thick layer of goat cheese on the halved ciabattas.
six: top it off with the roasted vegetables.
