Thai chili chicken sandwich



Did you have a great weekend?
Was it filled with booze, friends and ninja dancing?
Did you picknick in bed the next day because you were too hungover to sit at a table?
Yeah... me too.




Did you also have that kind of twelve hour nap that left your face barely recognizable from marks from the pillow case folds?
No? Just me? Hm... 



This thai chicken sandwich is a perfect pick-me-up after an awesome night out, but can also be served as a fancy lunch with girlfriends or an exotic dinner for two.

This one is definitely going into my AWESOME-FOR-ANY-OCCASION-YOU-CAN-IMAGINE-folder.




Thai chili chicken sandwich
enough for one big sandwich

2 sprigs of fresh mint
2 sprigs of fresh coriander
50 ml thai chilli sauce
1 T fresh lime juice + 2 T
1/4 cucumber
1 carrot
100 g soy sprouts
1/4 yellow bell pepper, finely chopped
1/4 red bell pepper, finely chopped
1 boneless chicken breast
1/2 french baguette or ciabatta
salt and pepper
dried chilli flakes

Sweet chili dressing
one: mix thai chili sauce with 1 tablespoon of lime juice.
two: chop half of the coriander and mint fine and mingle with the dressing.

Salad
one: use a mandoline or very sharp knife to to cut the cucumber and carrot into long, thin, noodlelike strips.
two: in a bowl, combine the soy sprouts, cucumber, carrot and bell peppers.
three: add both the leaves of one sprig of mint and one sprig of coriander to the salad.
four: sprinkle 2 tablespoons of lime juice on it and set aside.

Sandwich
one: season the chicken with a generous amount of salt and dried chili.
two: cook the chicken on a preheated grill over medium-medium high grill.  About 4 minutes per side.   until cooked trough and tender.
three: slice the baguette open and stuff as much salad in there as you can/want.
four: shred the grilled chicken in pieces and put them in there as well.
five: top the sandwich with a generous amount of dressing and simply enjoy!
