summer peach salad


3 things I'm totally excited about:

one: I'm moving!
Yes, I'm leaving my very tiny palace and moving into a small house. 
The idea of living in a real house makes me feel like a fricking grown-up.
I'll eat chocolate cake for dinner just to make sure I'm not.

two: Gentse Feesten!
Once a year, for ten days straight, my city turns into this huge free festival filled with free concerts, theatre and open-air parties at every corner. 
It's absolute madness!
My biorythm did already let me know it has shut down; so I'm wide awake at night and sleepy all day.
No bigs.

three: This easy-peasy peach salad




Summer peach salad

two hands full of fresh spinach / rocket salad
one ripe peach, sliced into wedges
1/2 red onion, finely sliced
2 thin slices of prosciutto (optional)
3 T goat cheese
1 T fried onion {walnuts are a great alternative}
2 T honey
1 t mustard
5 T olive oil
a pinch of salt and pepper

one: combine the spinach, peaches, prosciutto and onion in a bowl or pretty plate and toss to combine. 
two: top with the goat cheese and crispy fried onion.
three: combine the honey, mustard and olive oil for the dressing. Season to taste.
four: enjoy!

This is one of my favorite salads of all time. YUM! Praise the Lord for peach season.

Congrats on the move! There's nothing quite as fun as moving to a bigger, better place. Our old place was so shabby and moving to our new place was a breath of fresh air. Best of luck!
